In 1995, when this unique shochu was first distilled, the whiskey industry faced an unparalleled downturn. Meanwhile, Niigata’s “Tanrei Karakuchi” sake was the trendsetter, and shochu was on the cusp of a revolutionary surge. The third shochu boom, which unfolded in 2000, marked a pivotal moment, with shochu consumption surpassing sake by 2003, heralding a historic epoch in the beverage industry. Though I, Hashimoto, did not witness the third shochu boom firsthand, the tales of that era speak of a remarkable fervor, with producers perpetually facing product shortages. During this period, the shochu market saw an extraordinary explosion in popularity, leading to a climate where a myriad of products thrived. Amidst this, Ebisu Sake Brewery, our distillery, remained unwavering in its commitment to uncompromising quality standards, choosing to release only those sakes that had been meticulously aged for no less than three years. It’s nothing short of miraculous that, despite the soaring market demand, our brewery's steadfast philosophy enabled this shochu to mature for an astonishing 28 years without being rushed to market. Now, after a 28-year maturation, this shochu has achieved a harmonious 37% alcohol content, evoking the essence of a refined European digestif.
