[Valentine recipe] SHOCHU X's finest truffle chocolate

Valentine's Day is coming soon.

Introducing the finest chocolate recipe that is perfect as a gift for your loved ones.


You can easily make it using only SHOCHU X shochu and ingredients available at supermarkets.


If you make it with ``Kijina'', you will get a mellow and flavorful chocolate with the sweetness of barley.

If you make it with ``Kirasei'', it will taste like whiskey chocolate with a faint woody scent.

If you make it with ``Rinwa'', you will get the umami and sharp taste of barley, with a pleasant lingering aftertaste.


Please try it with your favorite shochu.



--- Ingredients (for 9-12 pieces)---

  • For ganache

・1 tablespoon of shochu

・2 chocolate bars (100g)

・Fresh cream 40-50cc

  • For coating

・1 chocolate bar (50g)

  • For finishing

・Appropriate amount of unsweetened cocoa powder

*1 tablespoon of shochu has a weak alcohol content. If you like a strong taste with alcohol, please try adjusting the amount.

*You can use any chocolate bar of your choice, but we recommend a high cacao type with 50% to 70% cacao.

1. Separate the chocolate bars for ganache and coating and chop them finely.



2. Heat the cream in a small pot over low heat until just before boiling, add the chocolate and shochu for the ganache, and mix well until smooth and glossy.



3. Line a plate with plastic wrap, use a spoon to divide into bite-sized pieces, and chill in the refrigerator for 20 minutes. (It is okay if the shape is not perfect at this time)



4. Remove from the refrigerator, shape into a ball with your hands, and refrigerate for 20 minutes.



5. Melt the chocolate bar for coating in the microwave for about 1 minute to 1 minute and 30 seconds, dip it in the ganache from step 4, and chill it again in the refrigerator for 20 minutes.



6. Sprinkle with cocoa powder and it's done.
